Quick Basic Tomato Sauce

This is a great sauce to have in the refrigerator or freezer for pasta or other grains, homemade pizzas or any dish requiring tomato sauce. You can make it more interesting by adding dried herbs, your choice of vegetables, or ground beef, chicken or soy. To make a thicker sauce, add 2 tablespoons of tomato paste.

RECIPE INSTRUCTIONS
1. Heat the oil in a large non-stick saucepan over medium heat. Sauté the onion and garlic for 3 minutes, stirring often.

2. Add the tomatoes, basil, oregano, bay leaves and brown sugar. Reduce the heat to low and cook for 15 to 20 minutes, stirring occasionally, until it has reduced slightly.

INGREDIENTS
2 tsp olive oil
2/3 cup finely chopped onion
2 tsp crushed fresh garlic
1 can (28 oz) plum tomatoes, crushed
2 tsp dried basil
1 tsp dried oregano
2 bay leaves
2 tsp brown sugar

Make Ahead: Refrigerate for up to 2 days, or freeze for up to 6 weeks. After defrosting, add 2 Tbsp tomato paste to thicken. To reheat, place over low heat for 15 minutes.
