A hearty side dish. Upgrade your mashed potatoes with veggies & protein and you’ll never buy boxed again!
RECIPE INSTRUCTIONS
1. Preheat oven to 425 F. Cover the potatoes with water in a pot, and boil for 10 minutes or just until tender. Drain and add the olive oil, milk, Parmesan cheese and salt and pepper. Mash until smooth.
2. Add the chicken, broccoli and ½ cup cheese. Mix well and place in 6 individual oven proof dishes. Sprinkle with remaining cheese. Bake for 5 minutes.

1½ lb Yukon Gold potatoes, peeled and cubed
2 Tbsp olive oil
3 Tbsp canned evaporated 2% milk (or 2% milk)
3 Tbsp grated Parmesan cheese (¾ oz)
pinch of salt and pepper
1 cup diced cooked chicken (6oz)
2 cups diced, steamed broccoli
3/4 cup grated cheddar cheese, divided
