Adding delicious homemade pesto is a unique way to flavour this salmon dish.
RECIPE INSTRUCTIONS
1. Preheat the oven to 425°F. Line a rimmed baking sheet with foil and lightly coat with cooking spray. Sprinkle salmon with salt and pepper. Place salmon on prepared baking sheet and cook for 10 minutes per inch of thickness.
2. To make the pesto: Combine the basil, parsley, pumpkin seeds, Parmesan, olive oil, garlic and salt and pepper in the bowl of a food processor and process until all the ingredients are finely chopped and well combined. Do not purée.
3. Top salmon with pesto and serve.

¼ cup toasted pumpkin seeds
2 Tbsp grated Parmesan cheese (½ oz)
2 Tbsp olive oil
½ tsp finely chopped garlic
pinch of salt and pepper
