Sesame Salmon with Soba Noodles and Edamame

Sesame salmon with soba noodles and edamame makes for a healthy Asian-inspired dish. Soba is the Japanese name for buckwheat – if you buy 100% buckwheat noodles, they are gluten-free. You can substitute for any of your favourite noodles, like rice or udon.

RECIPE INSTRUCTIONS
1. Preheat oven to 425 F. Line a baking sheet with foil spray and with vegetable spray.
2. Sprinkle sesame seeds over top salmon and bake for about 10 – 15 minutes, just until cooked through.
3. Meanwhile, cook noodles in boiling water, just until tender, about 3 minutes. Add edamame during the last minute of cooking. Drain and place on serving plate.
4. Combine soy sauce, lemon juice, sweet chili sauce, sesame oil, honey and cilantro in bowl. Pour all but 1 Tbsp over noodles and mix well. Lay cooked salmon over top and add remaining 1 Tbsp sauce. Garnish with cilantro.

4 oz soba noodles
1 cup shelled edamame
1 ½ lb salmon fillets (approx. 4)
1 Tbsp sesame seeds
2 Tbsp light soy sauce
1 Tbsp lemon juice
1 Tbsp sweet chili sauce
1 Tbsp sesame oil
1 tsp honey
¼ cup chopped cilantro
