Smoked Salmon, Cheese, Avocado and Caper Wrap

My version of a lox and cream cheese sandwich has fewer calories, less fat, and more interesting and tasty ingredients! The light ricotta and cream cheese combination is the key substitute for regular cream cheese. 

RECIPE INSTRUCTIONS
1. Purée the ricotta, cream cheese, goat cheese, mayonnaise, lemon juice, mustard, garlic and pepper in a small food processor, or with a hand beater, until smooth.

2. Divide the cheese mixture among the tortillas, spreading it to 1/4 inch from the edges. Place the lettuce overtop.

3. Scatter the salmon, onion, avocado and capers over the lettuce. Roll the bottom of each tortilla up and over the filling, fold in the sides and roll the tortilla up tightly. Cut in half before serving.

INGREDIENTS
1/3 cup smooth light ricotta
2 Tbsp light cream cheese
1/3 cup goat cheese
2 Tbsp light mayonnaise
1/2 tsp crushed fresh garlic
1 tsp Dijon mustard
2 tsp freshly squeezed lemon juice
pinch freshly ground black pepper
1 Tbsp capers
4 pieces leafy lettuce
4 oz smoked salmon, diced
1/2 cup diced red onion
1/2 cup diced ripe avocado
4 large tortillas (preferably whole wheat)
