Soba Noodle Napa Cabbage Salad

A fresh & filling salad. A unique mix of soba and cabbage is a tasty change from regular pasta or lettuce salads.

RECIPE INSTRUCTIONS
1. Cook noodles. Rinse with cold water. Add remaining ingredients, setting aside some mango for garnish.
2. To make sauce: mix ingredients together. Pour over salad and garnish with toasted coconut, almonds and extra mango.

INGREDIENTS
4 oz soba noodles, broken into thirds
1 cup thinly sliced mango
4 cups Napa cabbage, sliced thinly
1 ½ cups thinly sliced red pepper
1/3 cup cilantro
2 cups arugula
½ cup diced green onions
1 cup grated carrot
Sauce
3 Tbsp olive oil
3 Tbsp low sodium soy sauce
2 Tbsp oyster sauce
2 Tbsp rice wine vinegar
1 ½ Tbsp brown sugar
1 Tbsp grated ginger
1 Tbsp sesame oil
1 tsp minced garlic
½ tsp Sriracha
Garnish
3 Tbsp toasted coconut
1/3 cup toasted sliced almonds

Optional:
4 oz diced beef or chicken, cooked
