Chicken Pad Thai is always a favourite dish to order. With this easy recipe, you can make a delicious and lighter Pad Thai recipe at home.
1. To make the sauce: combine all sauce ingredients until well mixed.
2. Cook noodles in a pot of boiling water, just until tender. Drain and rinse with cold water. Drain and set aside.
3. In large skillet, add oil and chicken and sauté just until cooked. Set chicken aside.
4. Add bell peppers, carrots and garlic to the skillet and sauté for 2 minutes. Add eggs and cook just until scrambled. Add sauce and noodles and toss just until hot. Add chicken, green onions, cilantro and place on serving plate. Garnish with peanuts.

2 beaten eggs
2 green onions, chopped
3 Tbsp chopped cilantro
½ cup toasted chopped peanuts
