Cranberry, Orange and Applesauce Cake

This is a perfect loaf for breakfast with some fruit, or as a mid-morning snack. I use very little oil due to the applesauce, yogurt and added flavorful ingredients. You can also bake this using a loaf pan.

RECIPE INSTRUCTIONS
1. Preheat oven to 350°F. Lightly coat an 8-inch-square baking pan with cooking spray.

2. To make the topping, in a small bowl, stir together the oats, brown sugar, flour, cinnamon, oil and water. Mix together with a fork and set aside.

3. To make the cake, combine the applesauce, oil, sugar, egg, orange zest, orange juice concentrate, vanilla and yogurt in a large bowl. Whisk together until well combined.

4. In another bowl, stir together both flours, cinnamon, baking powder, baking soda, nutmeg, salt and cranberries. With a wooden spoon, stir the dry mixture into the applesauce mixture until the dry ingredients are just moistened. Pour the mixture into the prepared pan. Sprinkle the topping mixture over the batter.

5. Bake in the center of the oven for about 30 to 35 minutes, or until a tester inserted in the middle of the cake comes out clean. Cut into 16 squares.

1 cup granulated sugar
1 large egg
1 Tbsp orange zest
2 Tbsp orange juice concentrate
1 tsp vanilla extract
1/4 cup low-fat plain yogurt
3/4 cup all-purpose flour
1/3 cup whole wheat flour
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp nutmeg
pinch of salt
2/3 cup dried cranberries
