Flank Steak with Fresh Corn Tomato Salsa

My fresh corn salsa is the perfect topper for a lean cut of steak.

RECIPE INSTRUCTIONS
1. To make the salsa: grill corn for 5 minutes or just until slightly charred and tender. With a sharp knife, remove niblets from cob. Place in a bowl. Add remaining ingredients.
2. Grill marinated steak for about 5 minutes per side, or just until doneness is reached (125 F – 130 F for medium rare).
3. Slice steak against the grain thinly.
4. Garnish and serve.

INGREDIENTS
1 ½ lb flank steak (marinate or use a dry rub for at least 4 hours before cooking)

3 ears of corn shucked
1/3 cup finely diced red onion
1 small jalapeno finely diced (no seeds)
2 cups cherry tomatoes halved
1/3 cup chopped cilantro
2 tbsp lime juice
1 tbsp olive oil
1 tsp minced garlic
Salt
