Fresh Corn, Arugula & Mango Salad

An easy and flavourful salad that’s perfect for summer.

1. Add approximate 2 inches of water to a large pot. Bring to a boil. Add the corn, cover and boil for approximately two minutes. Drain and rinse with cold water immediately, until no longer warm.
2. With a sharp knife, remove the corn niblets from the stalk and place in a bowl. Add the remaining ingredients and toss. Adjust for seasoning.

4 cobs of corn, husks removed
2 cups arugula
1 cup diced, ripe mango
3 Tbsp olive oil
1 Tbsp lemon juice
1 Tbsp apple cider vinegar
1 tsp minced jalapeno peppers, seeds optional
½ tsp garlic
Salt & pepper
