These fresh salmon burgers are an outstanding alternative to hamburgers. Top with the avocado mash and you’re in heaven!
RECIPE INSTRUCTIONS
1. To make the burgers: In a food processor, process salmon, egg, panko, cilantro, green onions and garlic coarsely by turning processor on and off. Do not purée. Mixture will be loose. Form into 4 patties.
2. Either on a barbecue or a nonstick grill pan sprayed with cooking spray, grill the burgers until medium done, about 3 minutes per side on medium heat. Do not overcook.
3. Divide arugula and tomato slices on bottom bun. Top with the burgers and avocado mash. Top with bun.

1 lb boneless skinless salmon fillet, cut into 1-inch pieces
1 egg
¼ cup panko crumbs
¼ cup chopped fresh cilantro or parsley
¼ cup chopped green onions
1 tsp minced garlic
1 avocado (ripe) mashed with 2 tsp lemon juice and salt
4 large hamburger buns
8 Sliced tomatoes
½ cup arugula leaves
